This Secret Cucumber Detox Soup is one of my favorite recipes when I want to hit the “reset” button on my diet. It’s packed with cucumber, renowned for cleansing the liver, our body’s main detoxing organ. This detox soup also includes avocado, which adds healthy fats and a creamy texture. If you’ve had a particularly indulgent weekend, try this Secret Cucumber Detox Soup.
Start by adding the cucumber, onion, olive oil, lemon juice, vinegar and water into a Vitamix or high-powered blender. Puree on high until the mix is smooth.Then add in the chili powder, salt and remaining ingredients and blend together.

Ready in minutes

Garnish the Secret Cucumber Detox Soup with cuke slices on top and smoked paprika and serve. This refreshing soup makes a healthy meal. It’s also ready in minutes, and because it’s served cool, this cucumber soup is portable, excellent for taking to work. You won’t believe how good a detox can taste!

Secret Cucumber Detox Soup Recipe

Total Time: 5 minutes
Serves: 4

INGREDIENTS:

  • 1 cucumber (peeled and de-seeded plus additional cuke for garnish)
  • 1 tablespoon onion (minced)
  • 1 avocado, peeled
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 cup water
  • ¼ tsp Sea Salt
  • ¼ teaspoon Chili Powder
  • 1 dash of Cayenne Pepper
  • Paprika for garnish

DIRECTIONS:

  1. Throw all ingredients into a Vitamix or high-powered blender and blend on high speed until smooth.
  2. Serve, garnishing with extra cucumber cubes and smoked paprika if desired.
